Pure Fun Candy Canes

I'm doing the happy dance again.....

I forgot about these gluten free candycanes I found at a health food store last year!.

I bought each of the candy products throughout the year that they carried then to my delight they had the Christmas Candy Canes and I bought 4 boxes last year and hung all but one on my tree. Then of course ate one while enjoying the beauty of the snow falling outside and our Christmas tree lit up waiting for December 25th.

CROSS CONTAMINATION

When cross contamination is such a big thing with gluten free eaters it sounds to others that we are being princesses or high maintenance or a nuisance that they can complain about after you leave. Which is unfortunate. Although I have experienced this in the past I have to say that because of a family in the new town I live in has changed my opinion completely.

I had a wonderful experience when I moved to a different area of Canada when I was invited to eat at a family’s home that I didn't know. Wanting to meet new people and knowing that they were so friendly and kind I accepted...and to my delight. They made me feel so welcome even having to make sure nothing I ate was gluten filled. We ate a delicious meal and had great conversation. They taught me about the area and helped with places to apply to and many amazing attractions to see!
I thank them for their hospitality and giving nature. I even left with two bags full of fresh garden potatoes, a bag full of fresh garden carrots and three large squash, which I used up not wasting a single morsel. She even offered more garden veggies to me! Although I wanted to I declined...I didn't want to look greedy.

CROSS CONTAMINATION
Not only must we be cautious about the ingredients in gluten free food, we must also be aware of the possibility of cross contamination.
What is meant by "cross contamination" in the context of celiac disease? Cross contamination is the process by which a gluten -free product loses that status because it comes in contact with something that is not gluten-free.
At home the following practices will go a long way towards avoiding cross contamination:
A celiac should have their own butter dish and a cutting board that is used for gluten free foods only.
A celiac should have their own toaster if possible. A toaster oven, where the rack can be removed and washed if others have used it may be a good alternative.
If it is not practical to have a section of the counter top set aside for preparing gluten-free food only, always make sure that the counter space you are using to prepare gluten-free food is freshly washed to ensure it is free from crumbs or flour dust.
Do gluten-free baking first, and have it well wrapped and stored before doing anything with regular flours. Flour dust (in the air) from regular flours could settle on the gluten-free products, thus contaminating them.
Note: Although this doesn't fall into the cross contamination area, it is worth noting that a celiac should take precautions against breathing in flour dust when using other than gluten-free flours. Flour dust that settles on the nasal passages may eventually get swallowed and end up being digested.
Use clean utensils and avoid "double dipping" - knives or spoons are OK the first time, but once they have touched food with gluten, they can contaminate the food in the container if used again. If it is too difficult to train other family members in this regard, it would be wise for the celiac to have their own jar of jam, peanut butter, mustard, etc.
Be especially alert and cautious when you have guests helping in the kitchen - they will not have your gluten awareness. Also, it is when you are otherwise distracted that you are more likely to make a gluten error.
When making sandwiches, do the gluten-free ones first - otherwise be sure to wash your hands after touching regular bread and before touching gluten-free supplies.
Make sure any pots, utensils, etc. that are used for other foods are thoroughly scrubbed before using for gluten-free foods. In the case of something like muffin tins, paper liners may be a worthwhile consideration.
It is best to have a separate set of utensils with porous surfaces, such as wooden spoons, for your gluten-free baking. These utensils might retain some gluten particles after cleaning.
If using lentils, be sure to meticulously pick them over before putting in the pot to cook. Even if you buy them packaged, it is not uncommon to find kernels of wheat or oats (or pebbles) in with the lentils.
Away from home, be aware of sources of cross contamination:
Products in bulk bins can become contaminated by using the scoops in more than one bin. There is no assurance that the other customers will be as cautious as you. Also, flour dust in the air around these bins can cause a problem.
At the deli counter, where gluten-free meats are being cut using the same utensils without cleaning in between. Also, the cut meats often overlap on the counter.
Buffet lunches, where the chef tests the temperatures in all the dishes using one thermometer, or spoons are used for more than one dish.
In product production where a gluten-free product is not produced on a dedicated line. Cereals and candy bars that have gluten-free ingredients may be produced after a non GF item without having the equipment cleaned thoroughly in between.
French fries cooked in oil where battered foods have been fried.
Meat cooked on a grill which hasn't been cleaned after cooking regular food with gluten.
Milling of gluten-free grains on equipment that has been used for regular grains and has not been thoroughly cleaned.

Cases of celiac disease are on the rise -- especially in older adults. Find out what symptoms your doctor could be overlooking.

Imagine a common protein that can make you sick — really sick. For people who suffer from celiac disease, the body’s inability to tolerate gluten can cause problems ranging from persistent tummy troubles and fatigue to malnutrition, bone loss and an increased risk for certain cancers. Once thought to be a rare disease that shows up in children, celiac disease is on the rise — and it’s showing up more often in older adults.

This medical condition, also known as gluten intolerance or gluten-sensitive enteropathy, is an autoimmune condition where the body’s immune system reacts to gluten, a protein found in grains like wheat, barley, rye and spelt. The result? Damage to the intestinal villi — the tiny, finger-shaped structures that line the small bowel — that makes it difficult for the body to absorb essential nutrients like iron, calcium, vitamin D and protein. It’s not an allergy or intolerance to wheat, but rather a component of the grain.

Over time, the accumulating damage can result in malnutrition, bone loss, infertility, miscarriages and an increased risk for lymphoma and gastrointestinal cancers. Even more troublesome is the fact that celiac disease keeps company with other chronic conditions like rheumatoid arthritis, type 1 diabetes, lupus, Down syndrome and thyroid disease.

Recent research has been challenging what we thought we knew about the condition. A study conducted at the University of Maryland School of Medicine Center for Celiac Research, recently published in the Annals of Medicine, revealed two interesting trends. First, celiac disease is more common than we think. Blood tests from over 3500 participants revealed that the number of people with blood markers for celiac disease roughly doubled every 15 years — from 1 in 501 people in 1974 to 1 in 219 by 1984 and finally 1 in 133 in 2003.

The second: You’re never too old to develop celiac disease. As the study’s participants aged, the incidence of celiac disease increased. While the numbers were relatively small, the findings supported previous studies, including research out of Finland that reported that seniors were two and a half times more likely to have celiac disease than the general population.

Another thing experts are questioning is the cause. There is a genetic connection — roughly one in 10 people with celiac disease has a close relative who has the disease. However, there’s more to the story: Some people who carry the gene never develop the disease, and doctors don’t know exactly why some patients develop well it into adulthood. Current thinking is that environmental factors also play a role in triggering the disease, though it’s going to take a lot more research to find a connection and a cause. Some possible catalysts include surgery, emotional stress, infections or pregnancy.

Another possibility is that the microbes that live in our gut change as we age, which could affect our tolerance for gluten. Armed with this information, future research can focus on preventing celiac disease and other autoimmune disorders, not just treating them.

What’s the bottom line? Experts warn that patients and doctors alike should be on the look out for celiac disease, especially as we age.

The symptoms
Could you or someone you know be unknowingly suffering from celiac disease? The symptoms and severity vary from person to person, but can include:

- Digestive issues including bloating, gas, indigestion, nausea, constipation and recurring diarrhea.

- Signs of malabsorption. Many people with celiac disease have deficiencies of iron (anemia) as well as vitamins A, D, E, K, B12 and folate. Many people with celiac disease are also lactose intolerant because the intestinal damage affects their ability to break down lactase.

- Extreme weakness and fatigue.

- Unexplained weight loss.

- Bone or joint pain.

- Easy bruising or abnormal bleeding.

- Ulcers or canker sores in the mouth.

- Migraine headaches.

- Fluid retention, particularly swelling in the ankles or hands.

- Infertility (which occurs in both men and women).

- Menstrual irregularities.

- Depression.

- Unexplained neurological symptoms like loss of balance and numbness or tingling in the extremities.

- An itchy rash or blisters on the skin (a condition known as dermatitis herpetiformis).

Again, this is a broad list — some people only experience one or two symptoms, and not everyone experiences gastrointestinal issues.

Getting the right diagnosis
The symptoms can also indicate other common health conditions, which is why diagnosis can be tricky. Celiac disease is often misdiagnosed as conditions like irritable bowl syndrome, chronic fatigue syndrome or diverticulitis.

So what’s a patient to do? Talk to your doctor if you suspect celiac disease could be the cause. The challenge isn’t the lack of reliable ways to diagnose the disease —it’s a lack of awareness.

The first step is to take a blood test — specifically the IgA anti-transglutaminase antibody test (tTG) and the IgA anti-endomysial antibody test (EMA). This doesn’t necessarily have to involve your doctor. There is a home test kit on the market that measures tTG antibodies in the blood with a pinprick on the finger and ten minutes of your time. While the kit has been approved by Health Canada, it’s not perfect and it’s not meant for self-diagnosis. Experts warn if you get a positive result, talk to your doctor before you do anything else.

But because blood tests alone can’t provide a definitive diagnosis, doctors usually order a biopsy of the small intestine, the procedure considered the “golden standard” for celiac disease diagnosis. (Don’t worry, it’s not major surgery — it’s often done under sedation and on an outpatient basis.)

Of course, there is one catch: if you suspect gluten is the culprit, do not change your diet until you have a diagnosis. Dropping gluten from the menu means test results could show a false negative, plus you’ll need an accurate baseline for follow-up tests to monitor the condition.

Right now, the only treatment available for celiac disease is to follow a gluten-free diet. The good news is that some people begin to see relief within days of starting the diet, but it is a lifetime commitment. The intestinal damage will heal, but the intolerance never goes away.

Living gluten-free means avoiding the obvious culprits like certain grains and all products containing gluten. That last part is harder than it sounds because gluten can show up where you don’t expect it, like in sauces, candy, processed meats, some medications and supplements, malt vinegar and beer. Careful label reading is a must, as is consultation with a dietician to help create a balanced diet.

While the gluten-free diet is challenging and expensive, there are more resources and better awareness than ever before. More gluten-free products are available, even in mainstream stores, and better efforts are made to ensure accurate labeling. There are even gluten-free restaurants and bakeries popping up across the globe. Gluten-free food bloggers and cookbooks also make it easier to prepare tasty meals and baked goods (many of which will fool non-celiacs too).

Celiac disease in Canada
- Celiac disease affects nearly 1 per cent of the Canadian population — that’s more than 300,000 people. The actual incidence of the disease is predicted to be much higher because many people haven’t been diagnosed yet.

- It can take up to 10-12 years to get an accurate diagnosis. Patients are often bounced around from specialist to specialist before the correct cause is found. However, better awareness and screening is likely to cut this statistic.

- Celiac disease often shows up in people between the ages of 30 and 60, and the average age for diagnosis is 46.

Roasted Vegetables

This is a simple and easy recipe.


Ingredients
1 small butternut squash, cubed
2 red bell peppers, seeded and diced
1 sweet potato, peeled and cubed
3 Yukon Gold potatoes, cubed
1 red onion, quartered
1 tablespoon chopped fresh thyme
2 tablespoons chopped fresh rosemary
1/4 cup olive oil
2 tablespoons lemmon juice
salt and freshly ground black pepper

Directions
1.Preheat oven to 475 degrees F (245 degrees C).
2.In a large bowl, combine the squash, red bell peppers, sweet potato, and Yukon Gold potatoes. Separate the red onion quarters into pieces, and add them to the mixture.
3.In a small bowl, stir together thyme, rosemary, olive oil, lemmon juice, salt, and pepper. Toss with vegetables until they are coated. Spread evenly on a large roasting pan.
4.Roast for 35 to 40 minutes in the preheated oven, stirring every 10 minutes, or until vegetables are cooked through and browned.

Sabbatical...

I have been away for a time and in that time I have moved west a few provinces.
I travelled by car for 5 days to get to my desired destination. I am very happy to be here and thankful for the change in scenery, fresh water, and allergy free in healthy mountain air!

I will be changing things on Gluten Free Canadian Gal Blog Spot where I will post my findings each week with more focus on gluten free baking and cooking. I'm hoping to blog each Thursday so check back for your gluten free fix! I plan to engage in trying to find the products I need in a western world. I know there are fewer outlets for eating gluten free but my goal is to be successful in my weekly search!

CANADA'S FOOD GUIDE: Adapted for Gluten-free Diets

Following this guide is a great way to start eating health foods when new and old to G-Free.

CANADA'S FOOD GUIDE TO HEALTHY EATING*
(Adapted for Gluten-free Diets)
FOOD GROUP

Grain Products(Gluten-free = GF)
5-12 Servings
•1 slice GF bread
•1 GF muffin or bun
•30 g cold GF cereal
•3/4 cup (175 mL) hot GF cereal (e.g., cream of buckwheat, cornmeal, cream of brown or white rice)
•1/2 cup (125 mL) GF pasta
•1/2 cup (125 mL) rice
Choose gluten-free whole grain and enriched products more often.

* Note: In Canada most GF breads and flours are low in fibre and not enriched with iron and B vitamins.

Vegetables and Fruits5-10 Servings
•1 medium-sized vegetable or fruit
•1/2 cup (125 mL) fresh, frozen or canned vegetables or fruit
•1 cup (250 mL) salad
•1/2 cup (125 mL) juice
Choose dark green/orange vegetables and fruit more often (e.g., broccoli, carrot, spinach, squash, sweet potato, apricot, cantaloupe, orange).

Wendy Turnbull, who has celiac disease, developed a recipe for a gluten-free flour which she calls GEMS. Turnbull has taken her breakthrough to another level with her book Gems of Gluten-Free Baking.

When a person suffers from celiac disease, the aroma of home-baked bread, cookies, buns and cakes can be difficult to endure.

This is because those with the disease cannot tolerate gluten, a protein in wheat, rye and barley. When people with this condition eat foods or use products containing gluten their immune system responds by damaging the lining of the small intestine.

Consequently, they often miss out on enjoying delicious baked goods, something that most people take for granted.

But Wendy Turnbull, a Calgary-based celiac sufferer, has developed, through years of testing, a recipe for a gluten-free flour which she calls GEMS.

It’s a carefully selected mix of whole-grain flours which enables celiacs to bake bread that slices without crumbling and baked goodies which stay remarkably fresh and moist.

Turnbull has taken her breakthrough to another level with her book Gems of Gluten-Free Baking (Whitecap, $29.95).

"I have always loved cooking and the challenge of improving gluten-free baking was my goal," the 63-year-old said in an interview.

She began using brown rice flour for all her baking. Then Turnbull got to know other nutrient-rich gluten-free flours such as amaranth, buckwheat, chickpea and soy — in fact, 13 flours in total.

"Baking with the flours individually helped me discover their distinctive characteristics," she writes. "I used this information to create the GEMS flour." Here from the book is the GEMS Flour Formula. It requires four alternative gluten-free flours. The first two must be included; the next two offer a choice based on personal preferance, availability or cost. All will yield a superb loaf of bread.

GEMS Flour Formula

Basic: 675 ml (2 3/4 cups) brown rice flour and 150 ml (2/3 cup) sweet white sorghum flour

Add: 75 ml (1/3 cup) of one of the following flours: amaranth, buckwheat (light), gluten-free oat or teff

Add: 45 ml (3 tbsp) of one of the following flours: chickpea, millet, soy (low-fat or defatted), quinoa or white/red/black bean

Inspiration to me is curiosity, insightful people, odd ideas, bravery, animals, old movies, nature, romance novels and music.
Each of these inspires me in different ways in my life.

Depending on what I am doing I pull from the different inspirations that move me where I want to go or away from where I’m headed.

Take time for yourself and find what inspires you. It could be anything from cooking or baking to taking a walk to reading a book. Make sure to find time for yourself everyday to keep your mind, body and soul healthy and happy.

New Cosmetic Regulations

Your toothpaste tube and lipstick container will look a little bit different in 2007. In late 2006, Health Canada introduced new regulations that require manufacturers to include a full ingredient list on all packages of cosmetics before the end of 2007. Manufacturers can sell off their present stock of products without labels, but by the end of the year, all cosmetics must have a full ingredient list on the package or on a tag or tape attached to the product.

What is a cosmetic?
According to Health Canada, a cosmetic is “any substance or mixture of substances, manufactured, sold or represented for use in cleansing, improving or altering the complexion, skin, hair or teeth and includes deodorants and perfumes.” This includes animal grooming products, cosmetics used by professionals, and institutional products like hand soap used in restrooms.

Cosmetics are subject to the provisions of the Food and Drugs Act (FDA). The Cosmetic Regulations outline general safety, labelling and notification requirements. Products that have a therapeutic claim, e.g. sunscreens, vitamins and minerals, and homeopathic remedies, are regulated differently.

What needs to be labelled?

All ingredients in the product must be listed in descending order of predominance on the label, including colouring agents and fragrances. In the case of makeup and nail polish all the colouring agents in a range of colour shades may be listed, preceded by +/- or ± or “may contain”

What names might indicate gluten?
With only a few specific exceptions, an ingredient must be identified by its International Nomenclature Cosmetic Ingredient (INCI) name. The International Cosmetic Ingredient Dictionary and Handbook is an international naming system used in many countries including Canada, the United States, the European Union, and Japan. Learning a few Latin words will permit you to identify ingredients derived from gluten-containing grains. In particular, watch for oats (avena), barley (hordeum), rye (secale) and wheat (triticum). See Table 1 for some examples.


Does every ingredient with a warning word in the name contain gluten?

Some of the ingredients derived from wheat or other gluten-containing grains do not have any protein in them, and should not cause problems for someone with celiac disease. At this point, we do not know enough about the gluten content of all of the ingredients used in cosmetic manufacturing. It is a safe rule, therefore, that if a product is going on or into your mouth, and it has one of the warning words on the label, avoid the product.

What products should I be concerned about checking?

If you have celiac disease, you need to be concerned with cosmetic products that go in or near your mouth – lipstick, toothpaste, mouthwash, etc. If you are caring for a child with celiac disease, you may also be concerned about products used on their hands that might go in their mouth.

In general, if a product goes on your hair or on your skin, you do not need to be concerned because the protein that causes problems is too large to be absorbed through the skin. However, there is some anecdotal evidence that some people have problems with skin lotions. If you find you have problems, you may want to avoid the ingredients in lotions as well.

Summer Grilling

The light went on in my head yesterday when I realized I can grill my food to have a different summer time favour and everything will be G-free!

Yahoo! Let's have a party. Let me tell you that I have been craving a bbqd meal for some time and now is the time.

~Classic Hamburgers-put cheese in the middle of your burgers and watch the kids go nuts!
~Veggies-try layering the grill with a variety of vegetables, some are packed with antioxidants. Create ‘veggie kabobs’ with peppers, summer squash, and onions.
~Chicken-marinated, topped with pesto or just some herbs.
~Fish-try fresh from the lake like salmon or mackerel, which are packed with heart healthy omega-3 fats.
~Take your famous mexican meal...Tortillas, quesadillas, and bbq them to switch it up for your family. Enjoy the summer it doesn't last long.

Everything has to be so difficult. Why can't the companies do away with gluten in facilities that produce gluten free products so that we can buy foods that are safe? I'm glad that there is someone monitoring this so that the facts are stated in black and white so maybe this problem can be changed.

Healing from the inside out

This blog post is all about healing!

I read a health book last week and found many ideas to implement into my everyday eating ritual. I was dumbfounded when I read this clinical nutritionists healthy way of looking at how I eat.

Mastication or a more common word is chewing was a very important rule to follow, she said to take small amounts of food, take small bites and chew s-l-o-w-l-y. Food should be very soft and mushy before it goes down the hatch. This gives your stomach a break to process the food properly.

Switch it up! Eating the same foods over and over in the same day or even in three consecutive days is hard on your system. Who would of thunk...not me! I am the queen of eating potato chips, dessert and leftovers almost on a daily bases.

Eat fruits 30 min before a meal or 1 hour after a meal, which allows the nutrients from the fruit to be absorbed.

Eating grains or should I say too many grains is also hard for your stomach to digest. Try eating a variety of non-grains like Quinoua, Buckwheat and Teff. There is also, amaranth, arrowroot, tapioca, bean starch and carob powder to name a few.

Food combinations: Did you know that some foods combined don’t get processed properly in your stomach? I'll talk more about this next time...

Introduction...

Hello Everyone,

I guess I should have introduced myself many moons ago! I want to start by saying thank you for following me on my gluten free journey! being Celiac is very difficult but I am almost to the point of feeling comfortable in my own skin again. I was diagnosed with Graves Disease in 2001 and it all happened from there. As I progressed to the point of almost feeling myself again I found that eating certain foods reacted in my system.

So, here I am eating Gluten free and feeling so much better and wishing I had of figured out my problem years ago.

I don't drink this Café Mocha anymore because coffee and I don't see eye to eye unfortunately! But it is g-free and so Yummy I had to share. Enjoy!


Café Mocha
Makes 4 servings

What you need:
· 1/4 Cup water
· 3 Tablespoons brown sugar
· 2 Tablespoons cocoa powder
· 4 cups strong, hot coffee
· 4 Tablespoons whipped cream for garnish if desired

Direction:
What you do - Put water, brown sugar and cocoa powder in saucepan and heat over medium-high heat. Stir frequently while bringing to a boil. Boil for 5 minutes until thick and smooth. Spoon 2-3 teaspoons of cocoa mix in each of 4 coffee mugs. Pour hot coffee into each mug, filling close to the top. Float a dollop of whipped cream on the top of each mug (if desired).

YUMMMMM!!!!

Gluten the Hidden Grain


It's very easy for someone to say "you have celiac disease...you can't eat gluten anymore!"

But, it is very hard to go G-free. I am still struggling with the change because gluten is everywhere. It is hidden in places you would never think gluten would be, just like sand after a nice long day at the beach by the end of the day you have gritty sand in places you wouldn't think sand should be. Your day was enjoyable just like the amazing meal you just ate but wait 20 minutes and you feel the effects, although gluten's affects are longer lasting. I have changed the way I buy and cook food when grocery shopping in that I buy pure and natural vegetables, fruits and meats, even organic sometimes but it is hard to overcome this feeling of dread for the next meal.

My children are not G-free which makes it hard when cooking and baking. I don't have that down yet which I should since it has been several years. This is so difficult for me because I am an organized person and it stresses me out that I can't make it work. I have tried a schedule, post it notes, dry erase boards, binders with dividers, and a few other forms of organization, even unorganized meals and only on occasion it works. I breathe a sigh of relief thinking maybe this will work but next time usually the next day to my utter horror it fails yet again.

I can't force myself to get past the fact that I can't go into my local grocery store and buy almonds in case they went down a conveyer belt, which had a form of gluten on it. I am forced to go out of my way to buy foods that are much more expensive because I can't eat the normal North American foods. Where is the break in eating costs for people who have to live like this to be healthy but are in no way able to afford it? In other posts I talk about how to save money in different areas around the home so that the money can shift to the G-Free foods but there is only so much one can do.

I use the variety of popular gluten free cook books that are on the market today but find it overwhelming and time consuming to purchase and even harder yet, find most of the ingredients needed to make the foods, just so I can save some money. The amount of time it takes to prepare the foods can be ridiculous, who has that kind of time? I don't, although I would like to able to take the time and cook just one of those gourmet meals. It's just not the way I want to spend my time. I am a hearty meal, meat and potatoes girl, cooking in one pot is even better. Less to clean which gives me more time for my family and myself!

Life is to short to waste on stress and making as much money as you can, I'd rather have no stress, just enough money to get by but live my life to the fullest by having fun and doing what I love!

Find the hidden gluten in foods you may be eating but can't figure where the culprit is...

Changing my life style is what I need to do!

It's time to switch it up!
I have come to the conclusion that I need to change my daily routine, sleeping pattern, what I eat, my non-existing exercise regimen, and taking time away for myself. In doing this I will be creating a living atmosphere that will benefit everyone around me.

I am going to start this journey tomorrow!

I was sitting on my couch wondering why I don’t feel good the majority of the time? Why am I always tired?
Finally I asked myself … What can I do about it, I don’t want to waste another 7 years feeling crappy and wonder what I should have done!
So, I am changing the way I eat, sleep, exercise, and pamper myself!

I am going to start with exercise by walking every day.
As I am slowly working up my endurace I will reseach, study and learn how to eat properly. I am going to start by following this DIET.

I went to the library yesterday and got the Cook Right for your Type
& Allergies: Fight it with the Blood Type Diet also by Dr. Peter J. D'Adamo.

I already own Eat Right 4 Your Type which has helped me realize that I can do something about my symptoms. I am so happy that I have found a diet to free me from waking feeling poorly and going to sleep feeling poorly.

My biggest goal is to make this happen so that I can continue the patterns I develop now to last throughout my life. Keeping these NEW habits in place so that they are just natural to me will be the main focus for a healthier life. That way it won't be a struggle everyday, it will just be my...routine!

Sometimes I get so down and frustrated that there is so little that I can eat. The constant nagging in my head every time we go out and I can't eat anything, every time I turn around and find that I have a something else I can't tolerate. Even the fact that too much rice grain in any form can be dangerous. So, this is my ploy to find recipes that are G-Free but also have a variety of ingredients so that I don't end up with a yeast over growth or another disease!

I feel it is important to eat natural foods, organic if possible. I shop at Stemmler Meats & Cheese where I can find fresh delicious natural foods. The meats have no gluten, no lactose products and no monosodium glutamate (MSG), they use other seasonings to increase flavour instead of MSG.
